Grandmas Green Tomato Pickles

Making pickles is 'just for fun' and tasty too, nice to give to friends, to enjoy on a cheese platter, with grilled meats or sausages ...  over night soaking required ... fun weekend cooking

Grandmas Green Tomato Pickles


What you need step 1:

2 kg green tomatoes, chopped
1 kg brown onions, diced
1/2 medium cauliflower, chopped into small pieces
1 medium cumcumber, peeled and chopped into small pieces
8 cups (2L) water
1/4 cup salt

What you need step 2:

1/2 cup plain flour
2 1/2 cups brown sugar
1 1/2 teaspoons dry mustard
2 teaspoons tumeric
1/4 teaspoon cayenne
1 teaspoon curry powder
2 1/2 cups brown vinegar

Prepare hot sterilized jars ready for the pickles.

What you need to do:


Combine all veg in step 1, put in large bowl and cover with the water, add salt and stir until combined then cover and stand overnight.

The next day, put vegetables and all liquid into a large saucepan, bring to the boil then boil uncovered for 2 mins.  Take off the boil, drain then return vegetables to the sauce pan.

In another sauce pan put the flour, brown sugar, mustard, tumeric, cayenne and curry powder, stir to combine.  Gradually add the vinegar and mix to a smooth paste.  Put saucepan on heat and stir until mixture boils and thickens then simmer for 2 mins and remove from heat. 

Gradually add brown sugar mix to the vegetables, stir to combine then return pan to heat, keep stiring until mixture boils then boil for 3 minutes and remove from heat.

Finally pour mixture into hot sterilized jars and seal.

Gobble Gobble Burger


Ingredients

For the burger patti:

Turkey Mince

Ground Sage

Fennel Seeds

Finely chopped fresh chilli or dried chilli flakes to taste

A little beaten egg

Stale bread crumbs soaked in milk (squeezed)

Salt and Pepper

 

To assemble:

Lightly toasted Turkish bread

Rocket

Cranberry sauce

Bri Cheese sliced

Red onion thinly sliced

 

Method

Combine the ingredients for the burger patti, shape into patties and place in fridge before shallow frying in olive oil.  As an alternative to frying, lightly spray each side with olive oil, place on a baking sheet and cook in preheated oven for 20 mins or until cooked.

Assemble the burger using suggested ingredients.

Serving suggestion:  Heston’s triple cooked chips and a glass of SSB

Chicken Tikka Burger


Chicken Tikka Burgers with hot tomato relish

Ingredients

Chicken thye fillet

Greek style yogurt

Tikka masala curry paste

Olive oil to brush

Turkish bread or soft burger buns

Butter lettuce

Coriander leaves

Red onion thinly sliced

Hot tomato relish to serve such as Beerenberg hot tomato chutney

 

Method

Slice chicken thye into burger portions and marinate in the combined yogurt and curry paste (overnight if possible).  Brush heated chargrill with the olive oil and cook chicken then rest.

 

Toast the Turkish bread, top with lettuce, chicken relish or chutney and yogurt then add coriander and red onion if desired. 

The Sultan Burger


The Sultan Burger

 

Ingredients

Lamb mince

Red chilli small dice

Finely chopped dill

Finely chopped flat leaf parsley

Lemon rind finely chopped.

Turkish bread

Sliced tomato

Sliced cucumber

Sliced red onion

Yogurt

Hummus

 

Method

Combine lamb mince with the chilli, herbs, lemon rind, salt and pepper and form into burger patties.  Heat a chargrill or pan and cook.  Toast the Turkish bread.  Build you burger toping Turkish bread with humous, lamb patty, salad ingredients then drizzle with yogurt and top with remaining bread to form a sandwich.  Tuck in!
